I tend to snack throughout the day...A LOT. In an effort to not gain a million pounds while I'm stuck at home, I'm trying to snack healthier! This avocado black bean dip can be made in just about ten minutes. The recipe below makes about 4 servings. (Tastes pretty similar to guacamole but has the added protein of black beans!) I recommend eating it with tortilla chips.
Ingredients:
1/2 can of black beans
1/4 cup frozen corn
2 large avocados
1/4 of an onion
1-2 limes
Few sprigs cilantro
Chili powder
Pepper
Salt
Directions:
Thaw frozen corn.
Mash/chop two avocados. (Same way you make guac!)
Chop onions and cilantro.
Add onions, cilantro, and corn to a bowl with avocados.
Add in the black beans (make sure you wash them before).
Add chili powder, salt, pepper, and lime in small amounts till you like the taste!
Voila!
