Coconut Chia Seed Pudding

Dessert for breakfast? Sign me up.


(It's healthy, I promise.)


The recipe below makes 2 servings. Make sure you make it the night before you want to eat it for the best results!


Ingredients:

-Chia seeds (2 tbsp)

-Full fat coconut milk (1/2 cup)

-Water (1/4 cup)

-Shredded coconut (2 tsp)

-Cinnamon (1/2 tsp)

-Banana (1)


Directions:

1. Mash banana.

2. Add chia seeds.

3. Add water and coconut milk.

4. Mix and let sit for 5 -10 minutes.

5. Add shredded coconut and cinnamon.

6. Mix and let sit for another 10 minutes.

7. Cover and refrigerate overnight. (Make sure you put it into a bowl/container that has room for the chia seeds to "grow.")

8. Top with fresh fruit, chocolate, nuts, or anything else your heart desires!!
