Healthy Carrot Cake Muffins

I've never actually made carrot cake muffins from scratch and I was pleasantly surprised! Super moist and sweet and basically everything I wanted!


Ingredients:

Carrots (5)

Almond flour (2 cups)

Milk (1/4 cup)

Olive oil (1/3 cup)

Chopped walnuts (1/2 cup)

Baking soda (1 tsp)

Cinnamon (1 tbsp)

Honey (3 tbsp)

Sugar (1/2 cup)

Eggs (3)


Directions:

1. Preheat oven to 350 degrees F.

2. Grate carrots.

3. Mix wet ingredients (eggs, carrots, milk, olive oil, honey).

4. Mix in dry ingredients (almond flour, chopped walnuts, baking soda, cinnamon, sugar).

5. Once thoroughly mixed, spoon mix into muffin/cupcake liners in a muffin/cupcake pan.

5. Bake for 15-25 minutes based on the size of your muffins and enjoy fresh!
