Pav Bhaji -- Instant Pot Version

When I was little I was a super picky eater and this is one of the things I was happy to eat. My parents were happy because it's loaded with veggies :)


P.S. Bhaji is the actual curry and pav is the bread!


Ingredients:

  • Pav Bhaji Mix (can be bought at any Indian Store or on Amazon)

  • Potatoes

  • Bell pepper

  • Onion

  • Carrots

  • Green beans

  • Peas

  • Cilantro

  • Tomatoes

  • Serrano peppers

  • Ginger-garlic paste

  • Butter

  • Limes

  • Bread

  • Other cool veggies to add: beetroot, cauliflower, whatever you have in the fridge!


Overview:

  1. Cut all veggies into about 1/2 inch pieces

  2. Put the instant pot on sauté mode and add 1 tablespoon of butter

  3. Add a teaspoon of ginger garlic paste

  4. Add chopped onions, serranos and sauté till clear

  5. Add in rest of veggies except tomatoes (my veggies usually fill 3/4 of the 3 quart instant pot)

  6. Add a spoon of salt and mix

  7. Add water till it reaches about halfway in instant pot

  8. Put the instant pot on low pressure mode and cook for 20 minutes

  9. Add tomatoes to blender and blend for a few seconds (should almost be a liquid)

  10. Once done cooking and instant pot is safe to open, mash veggies with potato masher

  11. Add in tomato paste

  12. Add pav bhaji mix and red chili powder (the bhaji usually starts to splatter so make sure you use a lid and be careful!)

  13. Add salt to taste

  14. Add half a tablespoon of butter for extra richness


Top with chopped onions, cilantro, and lime juice. Serve with dinner rolls or Hawaiian rolls cut in half and toasted on a pan with some butter. Enjoy!
