Now that it's COLD (well as cold as it gets in Texas) I'm turning to more soups! Hope you enjoy!
Ingredients:
Fresh fennel bulbs
Sweet onion
Celery
Garlic
Red pepper flakes
Kale
Tomatoes
Parmesan
Veggie stock
Salt
Black pepper
White beans
Topping ideas: croutons, bread, crackers!
Recipe overview:
Chop fennel, celery, and sweet onion into thin slices
Finely chop garlic
Roughly chop tomatoes
Remove stems from kale and roughly chop
Rinse canned beans or cook beans if raw
Saute garlic, fennel, onion, and celery till fragrant
Add red pepper flakes and fry till fragrant
Add veggie stock and white beans
Add one spoon of salt
Cook on stovetop for around 30 minutes on medium or in an instant pot on low pressure for 20 minutes
Add tomatoes and kale
Let simmer for an additional 5 minutes (kale should soften)
Add pepper and salt to taste
Top with parmesan and serve!
