White Bean and Fennel Soup

Now that it's COLD (well as cold as it gets in Texas) I'm turning to more soups! Hope you enjoy!


Ingredients:

  • Fresh fennel bulbs

  • Sweet onion

  • Celery

  • Garlic

  • Red pepper flakes

  • Kale

  • Tomatoes

  • Parmesan

  • Veggie stock

  • Salt

  • Black pepper

  • White beans

Topping ideas: croutons, bread, crackers!


Recipe overview:

  1. Chop fennel, celery, and sweet onion into thin slices

  2. Finely chop garlic

  3. Roughly chop tomatoes

  4. Remove stems from kale and roughly chop

  5. Rinse canned beans or cook beans if raw

  6. Saute garlic, fennel, onion, and celery till fragrant

  7. Add red pepper flakes and fry till fragrant

  8. Add veggie stock and white beans

  9. Add one spoon of salt

  10. Cook on stovetop for around 30 minutes on medium or in an instant pot on low pressure for 20 minutes

  11. Add tomatoes and kale

  12. Let simmer for an additional 5 minutes (kale should soften)

  13. Add pepper and salt to taste

  14. Top with parmesan and serve!
