Quinoa Tofu

Overview:

  1. Cut tofu

  2. Cook quinoa till fluffy

  3. Fry tofu in pan till crispy on both sides

  4. Remove tofu and place on plate

  5. Sauté veggies in same pan (onion, bell pepper, carrot, broccolini, and beans)

  6. Add tofu to veggies and add sauce (peanut butter, maggi hot and sweet, soy sauce, red pepper flakes, honey)

  7. Serve on bed of quinoa!

Tips:

  • Make sure to prep tofu by soaking up water with paper towels/clean kitchen towels. I usually use a weighted pan to draw out all the liquid and absorb it with towels.

  • Taste your sauce before adding it!

  • Can substitute in other veggies or mushrooms.
