The below recipe makes about 4 servings!
Ingredients:
Milk (1/3 cup)
Tomatoes (4)
Bell pepper (1)
Baby spinach (few handfuls)
Onion (1/2)
Garlic (8 cloves)
Parmesan
Pepper
Salt
Red pepper flakes
Olive oil
Directions:
Boil pasta according to directions.
Chop veggies.
Add olive oil to pan.
Cook garlic and onion.
Add in remaining veggies.
Cook till tomatoes reduce.
Add in milk.
Add in about 1/4 cup of parmesan (make it as cheesy as you want!)
Add in cooked pasta.
Simmer for about 1-2 minutes till everything gets combined nicely.
Add red pepper flakes, salt, and pepper to taste.
Top with cheese and serve!
