I accidentally bought too many Hawaiian rolls (not a bad problem to have!) and decided to make little chicken sliders. YUM. The good thing about making tiny sandwiches is you can eat 10 and not feel too bad :P
Recipe Overview:
Cut chicken breast into small pieces and flatten slightly.
Mix chili powder into yogurt.
Marinate chicken in yogurt mix for a few minutes while you prep breadcrumbs.
Add breadcrumbs to a plate and sprinkle in pepper, Italian seasoning, and salt.
Place pan on medium-high heat and coat bottom with oil.
Coat marinated chicken in breadcrumbs and place directly in pan.
Let cook till golden brown and flip (about 2-3 minutes).
Once browned and crispy on both sides, place on tray in oven and bake till cooked through. Depends on size of chicken pieces, but I placed mine for about 7-8 minutes.
While the chicken is cooking, slice and warm up Hawaiian rolls.
Cut lettuce into shreds.
Add a thin layer of mayo, add lettuce, add chicken once cooked, and top with bread and butter pickles!
Voila!!
