Hi everyone! After a long hiatus, I'll be posting again now that I'm done with my summer internship and have some more downtime.
Here's a fun take on taco bowls that was created after we bought too many flour tortillas.
Directions:
Cut accordingly and bake tortillas in a muffin pan till crispy.
Let the "taco bowls" cool and store in airtight container till ready to be eaten.
Prep the fillings:
Heat refried beans and season (cumin, salt, chili powder).
Saute bell peppers and onions.
Make pico de gallo out of tomatoes, onions, cilantro, salt, pepper, lime juice.
Chop one avocado.
Assemble by placing all fillings into the "taco bowls." I topped them with sour cream, jalapeños, and shredded cheese.
Serve and enjoy!
