Requires very few ingredients and comes together in a matter of minutes! Eaten with lots of guacamole :-)
Overview:
Chop bell pepper and onion.
Add veggies and cheese inside two tortillas.
Add a bit of butter to pan and cook quesadilla until cheese melts.
Tip: Flip when about halfway done so the tortillas don't burn!
Serve with guacamole!
Ingredients: Avocado, cilantro, lime juice, salt, onion, corn, cilantro
